Asian-style Nachos

Ingredients
1 ripe Mango, peeled, pitted, and finely diced
2 tablespoons red onion, finely chopped
3 tablespoons cilantro leaves, chopped
1 pkg Hilary’s Black Rice Burger
Tortilla chips, of your choice
¼ cup cucumber, thinly sliced
½ cup shredded cabbage & carrots slaw mix
sriracha sauce (optional)
Preparation
Mix the mango, red onion, and cilantro in a small bowl to make a salsa. Set aside. Next, prepare the Black Rice Burgers as per package instructions. Crumble and set aside. Place the chips on a large plate and top with crumbled burgers. Next, add the cucumbers and carrot/cabbage slaw mix. Then, top with mango salsa mixture and drizzle with sriracha sauce.
