1 T extra virgin olive oil
1 lg yellow onion, thinly sliced
1/2 t cumin seeds
1 T fresh cilantro, chopped
1T fresh mint, chopped
1 pk Hilary's Golden Curry Millet Medley
1 c coconut yogurt or your favorite yogurt
lemon wedges for serving
Heat olive oil in sauté pan over medium heat. Add onion and cumin seeds and cook until the onions are caramelized and golden brown. This should take approximately 20-25 minutes. Water can be added to the pan to prevent burning.
While the onions are caramelizing, shop the cilantro and mint and set aside. Next, prepare the millet medley as per package instructions.
To assemble the mujaddara, place the millet medley on a plate. Top with yogurt and caramelized onions. Lastly, top it all with the chopped cilantro and mint. Serve with lemon wedges and enjoy!
