Mediterranean Collard Greens Wraps



16 Hilary's Original Veggie Bites
8 collard greens
2 c hummus
1 c sprouts
1 c carrots, shredded
1 red bell pepper, thinly sliced
1 avocado, thinly sliced



Prepare the Hilary's Original Veggie Bites as per instructions on package. Cut the stem from each collard green at the base. Use a small knife to trim the spine down the middle of the leaf. Trim it so spine is flat with the rest of the green. Cook greens in boiling water, uncovered for 1 minute. Drain and let cool. Lay a collard green out flat and place hummus towards the bottom of the leaf. Place all other ingredients on top of the hummus in this order: sprouts, shredded carrots, red bell pepper, avocado slices, and Hilary's Original Veggie Bites. Each wrap should contain two bites. Roll the wrap and tuck in sides. Slice in half. Continue stuffing and rolling until you've used all of the collard greens.
