1/2 c vegan mayo
4 T canned pumpkin
1/4 t garlic powder
1 c Brussels sprouts, thinly sliced
1 c fresh spinach, thinly sliced
salt and pepper, to taste
2 pk Hilary's Curry Burger
1 sm red onion, thinly sliced
4 buns of your choice
First begin by preparing the pumpkin ailoi. Mix the vegan mayo, canned pumpkin, and garlic powder in a small bowl and set aside.
In a separate medium-sized bowl, toss the sliced Brussels sprouts and the sliced spinach. Add salt and pepper to taste and toss to coat. Set aside.
Next, prepare the Hilary's Curry Burgers as per package instructions.
To prepare the burgers, place the Brussels sprouts and spinach mixture on the buns. Top with the burgers and the pumpkin aioli. Next, add the sliced red onion and top buns. The perfect burger for this Autumn season!
