Spicy Thai Burgers with Sweet Chili Lime Vegan Mayo

Ingredients:
Hilary’s Spicy Thai Burger
Gluten-free bun, toasted
Gentilina lettuce
2 slices tomato
Shredded carrots
Bean sprouts
1 slice vegan cheddar cheese
4 slices jalapeno pepper
Sweet Chili Lime Vegan Mayo:
1 cup (240ml) Avocado Oil*
1/2 cup (120ml) Unsweetened Almond Milk
1 Tbsp Olive Oil
1/2 tsp Salt
2 tsp White Vinegar
3 Tbsps Sweet Chili Sauce
1 Tbsp lime juice
2 tsp chives (chopped finely)
Instructions:
1.) Mix all vegan mayo ingredients in a bowl. Use an immersion (handheld) blender to blend into a mayonnaise. Please Note: Ingredients must be at room temperature!
2.) Assemble burger using all ingredients + top with vegan mayo. ENJOY!
