Spicy Veggie Taco Bowls

⁣⁣Ingredients:⁣⁣⁣

½ cup brown rice⁣⁣⁣
2 tbsp olive oil⁣⁣⁣
Hilary’s Spicy Veggie Sausage⁣⁣⁣
¼ can black beans, drained and rinsed, soaked for 4-6 hours in water⁣⁣⁣
1 Roma tomatoes, diced⁣⁣⁣
Vegan sour cream⁣⁣⁣
1 avocado, diced⁣⁣⁣
⁣⁣⁣
Taco seasoning: 
1 Tbsp. chili powder⁣⁣⁣
1/4 tsp. garlic powder⁣⁣⁣
1/4 tsp. onion powder⁣⁣⁣
1/4 tsp. crushed red pepper⁣⁣⁣
1/4 tsp. dried oregano⁣⁣⁣
1 tsp. ground cumin⁣⁣⁣
1 tsp. sea salt⁣⁣⁣
1 tsp. black pepper⁣⁣⁣
⁣⁣⁣
Instructions:⁣⁣⁣
1.) Place beans in pot and cover with 2-3” water above the beans. Boil for 45 min to⁣⁣⁣
an hour.⁣⁣⁣
2.) Mix dry ingredients together for the taco seasoning.⁣⁣⁣
3.) In large saucepan of 2 cups water, cook rice, set aside.⁣⁣⁣
4.) Heat olive oil in large stockpot over medium high heat. Add crumbled Hilary’s Spicy Veggie Sausage alongside taco seasoning mixture. Cook for 15 min.⁣
5.) Layer ingredients including Roma tomatoes and avocado with sour cream on top in a bowl. Enjoy!⁣
