Spicy Veggie Taco Bowls

Ingredients:
½ cup brown rice
2 tbsp olive oil
Hilary’s Spicy Veggie Sausage
¼ can black beans, drained and rinsed, soaked for 4-6 hours in water
1 Roma tomatoes, diced
Vegan sour cream
1 avocado, diced
Taco seasoning:
1 Tbsp. chili powder
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/4 tsp. crushed red pepper
1/4 tsp. dried oregano
1 tsp. ground cumin
1 tsp. sea salt
1 tsp. black pepper
Instructions:
1.) Place beans in pot and cover with 2-3” water above the beans. Boil for 45 min to
an hour.
2.) Mix dry ingredients together for the taco seasoning.
3.) In large saucepan of 2 cups water, cook rice, set aside.
4.) Heat olive oil in large stockpot over medium high heat. Add crumbled Hilary’s Spicy Veggie Sausage alongside taco seasoning mixture. Cook for 15 min.
5.) Layer ingredients including Roma tomatoes and avocado with sour cream on top in a bowl. Enjoy!
