Roasted Veggies and Smoked Mozzarella Burger

Roasted Veggies and Smoked Mozzarella Burger



1 c beets, cut into sticks
1 c carrots, cut into sticks
1 t coconut oil
salt and pepper
2 pk Hilary's Black Rice Burger
Miyoko's Smoked Mozzarella, sliced
1 Bosc pear, thinly sliced
lettuce greens
4 buns of your choice



Preheat oven to 450 degrees F. Place the beets and carrots on a parchment-lined baking sheet and toss with coconut oil, salt and pepper. Bake for 25 minutes or until tender.

When the veggies are almost done roasting, cook the Hilary's Black Rice Burgers as per package directions. Once the burgers are done, top them with the Miyoko's Smoked VeganMozz and place under the broiler until the cheese begins to melt and brown.

To assemble, place the lettuce greens on buns with the burgers and mozz. Then top with the sliced pears, roasted beets and carrots, and top bun. Enjoy!
